Description
Did you know that the country of Brazil has the largest population of Japanese people outside of Japan? Beginning in the early years of the 20th century, thousands of Japanese immigrants made their way to the Portuguese speaking country to seek their fortune, finding jobs in the large agricultural economy there. Naturally, as with all immigrants to countries around the world, the Japanese made almost as much of an imprint on their adopted homeland as it did on them. So, why are we talking about Japanese immigration to Brazil? The answer is that the country also happens to be home to the fabulous Mate we've used to expand the character of this Matcha. (And Matcha, as tea lovers know, is from Japan.)
It should come as no surprise that our inspiration for developing this innovative brew came from a visit to Brazil made by our Master Blender many years ago. It was the 1970's and he had gone down to source black teas from a grower, who as fate would have it, was a Japanese Brazilian. In addition to his black tea crop, the grower also kept a small plot of Mate behind his house for personal use. Our Master Blender tried a cup and was hooked.
Many years later, when we began manufacturing our own premium matchas, our Master Blender's thoughts turned to the Japanese Brazilian grower he had met decades in the past, and decided to craft a matcha / mate blend in his honor. The result is the tea you are now holding. Grassy, bright and invigorating, we invite you to brew a cup and dream of far away, much warmer places.
Did you know: On a gram / gram basis, Matcha contains approximately 10 x the polyphenols of regular teas? Why? Unlike other teas, with Matcha, the leaves themselves are consumed.

IDEAL BREWING TEMPERATURE: 85ºC/185ºF. For Food Safety reasons bring water to 100ºC/212ºF and let it cool down to 85ºC/185ºF.

Today's water has been known to carry viruses, parasites and bacteria. Boiling the water will kill these elements and reduce the potential incidence of water-borne illnesses.

Epic Iced Tea Instructions
Tea isn't just served hot! Iced tea is one of the most refreshing and natural thirst quenchers around the world. Here is our suggested method of brewing the best iced tea.
ICED TEA BREWING METHOD (Pitcher): (To Make 1 Liter/Quart):
- Place 6 slightly heaping teaspoons of loose tea or 6 tea bags into a teapot or heat resistant pitcher.
- Using filtered or freshly drawn cold water, boil and pour 1¼ cups/315ml over the tea.
- Steep for 5 minutes.
- Quarter fill a serving pitcher with cold water.
- Pour the tea into your serving pitcher straining the tea or removing the bags.
- Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste.
- A rule of thumb when preparing fresh brewed iced tea is to increase
- the strength of hot tea since it will be poured over ice and diluted with cold water.
Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.

- Place 1 slightly heaping teaspoon of loose tea or 1 tea bag into a teapot for each serving required.
- Using filtered or freshly drawn cold water, boil and pour 6-7oz/170-200ml per serving over the tea.
- Cover and let steep for 5 minutes.
- Add hot tea to a 12oz/375ml acrylic glass filled with ice, straining the tea or removing the bags.
- Not all of the tea will fit, allowing for approximately an additional ½ serving.
- A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted.
Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.
