Description
The sensuous flavor combination of ginger and peach is a true delicacy of India. The two items are most commonly used to flavor chutneys, the spicy jams that accompany most Indian meals. It is from one such chutney, enjoyed by our Master Taster on a long ago trip to India, that we drew our inspiration for the fabulous herbal tea.
After visiting the tea auctions one day in Calcutta, our Master Taster decided to wander home through the Machua Bazaar, the city's famous fruit market. The monsoons having recently passed, fresh peaches from Himachal Pradesh (an Indian state bordering Tibet), and a multitude of fresh peach products including chutneys, were in abundance throughout the bazaar. As the story goes, our master taster bought a jar of chutney from one of the market vendors and headed home. At dinner that night, the chutney's sweet blend of pulpy peach infused with ginger was such a hit that he decided that the following morning he would head back to the market to buy up the merchant's entire stock. Arriving at the bazaar at the crack of dawn, he began wandering in what he thought was the direction of the chutney merchant. Now if you've ever been to the Machua bazaar, you'll know that retracing your steps along it's narrow, dusty, and crowded alleyways is no easy feat. Fixated on the savory blend of peach and ginger our Master Taster wandered the market until evening but was never able to find the merchant's stall. With a sigh of resignation he returned home to finish what was left of the precious chutney and vowed that if he could never have that chutney again, he would have to create a tea in its honor.
And that, gentle reader, is exactly what he did. After experimenting with various teas to use as a base for this blend, he discovered that the flavor of a mellow rooibos blended with sharp ginger and sweet peach, came the closest to his precious chutney. The rooibos he used is a top grade variety produced in the Cederberg region of South Africa and is noted to be rich in many essential minerals. Like the chutney that inspired it, one sip of this brew will send you off on a daydream visit to the bazaars of Calcutta. With sharp hints of ginger offset by juicy sweet peach overtones, this is one tea you'll never be able to forget. And thankfully, unlike the wares of the mystery chutney merchant, you'll always know where to get more!

Epic Iced Tea Instructions
Tea isn't just served hot! Iced tea is one of the most refreshing and natural thirst quenchers around the world. Here is our suggested method of brewing the best iced tea.
ICED TEA BREWING METHOD (Pitcher): (To Make 1 Liter/Quart):
- Place 6 slightly heaping teaspoons of loose tea or 6 tea bags into a teapot or heat resistant pitcher.
- Using filtered or freshly drawn cold water, boil and pour 1¼ cups/315ml over the tea.
- Steep for 5 minutes.
- Quarter fill a serving pitcher with cold water.
- Pour the tea into your serving pitcher straining the tea or removing the bags.
- Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste.
- A rule of thumb when preparing fresh brewed iced tea is to increase
- the strength of hot tea since it will be poured over ice and diluted with cold water.
Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.

- Place 1 slightly heaping teaspoon of loose tea or 1 tea bag into a teapot for each serving required.
- Using filtered or freshly drawn cold water, boil and pour 6-7oz/170-200ml per serving over the tea.
- Cover and let steep for 5 minutes.
- Add hot tea to a 12oz/375ml acrylic glass filled with ice, straining the tea or removing the bags.
- Not all of the tea will fit, allowing for approximately an additional ½ serving.
- A rule of thumb when preparing fresh brewed iced tea is to increase the strength of hot tea since it will be poured over ice and diluted.
Note: Some luxury quality teas may turn cloudy when poured over ice. This is a sign of luxury quality and nothing to worry about.
